INGREDIENTS

  • 1 whole Chicken, 3 - 5 lbs.
  • 2 tsp. Salt
  • 2 tsp. Paprika
  • 1 tsp. ground Black Pepper
  • 1/2 tsp. Onion Powder
  • 1/2 tsp. granulated Garlic
  • 2 Tbl. unsalted Butter
  • 6 sprigs Thyme

DIRECTIONS

  • Heat cast iron skillet by placing in cold oven and starting heat at 450°F. Combine salt, paprika, black pepper, onion powder and garlic in a small bowl and mix well. Cut chicken into pieces and place pieces on a sheet pan. Sprinkle all pieces well with the salt/paprika mixture using all of the mixture.
  • Once the oven reaches 450°F, carefully remove the skillet from the oven and place on stove top. Add butter to the skillet to melt. Add thyme and move around in the melted butter. Add chicken to the skillet, skin side down. Place skillet with chicken into the 450°F oven for 15 minutes. Remove chicken from the oven and flip all pieces of chicken over so that the skin side is now up.
  • Return skillet and chicken to oven for another 15 minutes or until breasts reach an internal temperature of 160°F and legs and thighs reach 175°F. Leave chicken in skillet for about 10 minutes to let juices get reabsorbed back into chicken. Remove chicken to a serving platter.
  • Remove the thyme from the skillet. Using a whisk, break up the brown particles in the bottom of the skillet mixing with any drippings left in the skillet. Drizzle the drippings over the chicken. Serve and enjoy!
