INGREDIENTS

  • 2 lbs. chicken tenders (see note)
  • 2 eggs
  • 1 tsp salt
  • 3/4 cup all-purpose flour
  • 6 tbsp olive oil
  • 1 red bell pepper, sliced 1/4" thick
  • 8 cloves garlic, sliced thinly
  • 1 tbsp all-purpose flour
  • 1 1/4 cup chicken broth
  • 3/4 cup white wine
  • 4 tbsp butter
  • 1 tbsp parsley, chopped

DIRECTIONS

  • Note: sliced boneless skinless chicken breast may be substituted for tenders. Use kitchen shears and remove tendons from tenders. Place tenders flat and use paper towels to remove moisture. Sprinkle tenders with salt and pepper.
  • Place eggs and 1/2 tsp salt in flat dish and whisk to beat eggs and mix well. Place flour into a flat dish. Place tenders into egg mixture, then into flour to coat well. Place tenders on a dish and set aside.
  • Place 2 tbsp olive oil into 12-inch skillet over medium-high heat. When oil shimmers, place 1/2 the tenders into skillet in one layer. Cook tenders for 3 minutes per side or until tenders reach internal temperature of 160°F. Transfer to a plate and cover with foil. Wipe out skillet and repeat with 2 tbsp olive oil and remaining tenders.
  • Wipe out skillet. Add 2 tbsp olive oil and heat over medium-high heat until oil shimmers. Add peppers and 1/2 tsp salt to skillet. Stir and cook peppers until tender, 5 - 7 minutes. Add garlic, stir and cook until fragrant, about 1 minute. Sprinkle pepper mixture with 1 tbsp flour. Stir well. Cook for 1 minute. Add broth and stir well, removing any brown bits from bottom of skillet. Add wine, mix well, bring to a boil, reduce to low and cook 5 - 7 minutes to reduce down to 1 1/2 cups. Add butter and stir until melted. Add tenders to skillet and toss to coat well. Transfer plate, pour sauce over, garnish with parsley.
