INGREDIENTS

  • 4 tbsp butter
  • 1/4 cup Crystal hot sauce
  • Pinch black pepper
  • 2 cloves garlic, minced
  • 1/2 cup all-purpose flour
  • 1/4 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt
  • 10 chicken wings, tips discarded and cut in half
  • vegetable oil, for frying
  • celery sticks
  • blue cheese dressing

DIRECTIONS

  • Combine the flour, paprika, cayenne pepper and salt and mix well. Place the flour mixture into a plastic bag or other suitable container to be able to add wings and coat them well with the flour mixture. When wings have been coated, place on a sheet pan in a single layer and refrigerate for at least one hour.
  • Place vegetable oil into a large pot to a depth of about 4 inches. For best results, place a thermometer into the oil. Over medium heat, heat the oil to 375°F. Turn oven to lowest temperature. In a small saucepan, melt the butter over low heat. Add the hot sauce, black pepper and garlic and stir to mix well. Maintain on low heat.
  • Carefully place 1/2 of the wings into the oil and increase heat to high. The temperature of the oil will drop once the wings are added and for best results the oil should be maintained at 350°F. If the temperature is maintained at 350°F, the wings will be done after 8 minutes but should be verified with an instant read probe thermometer.
  • Carefully remove the wings from the hot oil, place on a paper towel lined plate and place into the heated oven to hold. Repeat the process with the remaining wings. When last batch of wings are done, place all wings into a large bowl and pour warm pepper sauce over the wings. Toss the wings to coat well with the sauce. Serve the wings with celery sticks and blue cheese dressing.
