Halibut with Lime and Cilantro Recipe

Halibut with Lime and Cilantro marinates halibut or salmon steaks in lime juice, fresh cilantro, vegetable oil and garlic before grilling to create a delicious fish dish served with salsa and bulgur pilaf.

INGREDIENTS

  • Lime-Cilantro Marinade (below)
  • 2 halibut or salmon steaks (about 3/4 pound)
  • Freshly ground pepper, to taste
  • 1/2 cup salsa
  • For Lime-Cilantro Marinade:
  • 2T lime juice
  • 1T chopped fresh cilantro
  • 1t olive or vegetable oil
  • 1 clove garlic, finely chopped

DIRECTIONS

  • Make Lime-Cilantro Marinade in shallow glass or plastic dish or resealable plastic food-storage bag - by mixing all ingredients well. Add fish; turn several times to coat with the marinade. Cover and refrigerate 15 minutes, turning once.
  • Heat coals or gas grill for direct heat. Remove fish from marinade; discard marinade.
  • Cover and grill fish 4 to 6 inches from medium heat 10 to 20 minutes, turning once, until fish flakes easily with fork. Sprinkle with pepper. Serve with salsa.
