INGREDIENTS

  • 1 1/2 tsp Olive (or cooking) oil
  • 2 Boneless, skinless chicken breast halves (4 - 6 oz)
  • 1 tsp chopped fresh rosemary (or 1/4 tsp dried)
  • Salt, sprinkle
  • Pepper, sprinkle
  • 3/4 cup prepared chicken broth
  • 2 tbsp balsamic vinegar
  • 2 tbsp maple (or maple flavored) syrup
  • 1 tsp coarsely ground pepper
  • 1/2 tsp chopped fresh rosemary or 1/8 tsp dried
  • 1 tbsp cold butter

DIRECTIONS

  • Heat olive oil in medium frying pan on medium-high. Add chicken. Sprinkle with next 3 ingredients. Cook for 2 to 3 minutes per side until browned.
  • Add next five ingredients. Bring to a boil. Reduce heat to medium-low. Cook covered, for 12 to 15 minutes until chicken is fully cooked and internal temperature reaches 170 degree F. Transfer to plate. Cover to keep warm.
  • Heat and stir broth mixture for about 2 minutes until reduced by half.
  • Add butter. Stir until melted. Pour over chicken. Serves two.
