INGREDIENTS

  • Iceberg Lettuce
  • Tomato, sliced
  • 2 slices American Cheese
  • 2 hamburger buns
  • 8 ounces ground beef, 80% lean
  • 1/4 tsp vegetable oil
  • 1/8 tsp salt
  • black pepper, to taste
  • For The Sauce:
  • 1 tbsp shallot, minced
  • 1 1/2 tsp dill pickle, minced
  • 1/2 tsp dill pickle brine
  • 2 tbsp mayonnaise
  • 1 1/2 tsp ketchup
  • 1/8 tsp sugar
  • 1/8 tsp black pepper

DIRECTIONS

  • NOTE: Turn on the stove blower, open windows and doors. This process will created a lot of vapors. It is not recommended to cook more than two burgers. Place all ingredients for the sauce into a bowl and mix well to combine. Place 1 tbsp of the sauce on the cut part of each bun top.
  • Using a scale, portion ground beef into 2 ounce balls. Cover the bottom and sides a heavy sauce pot with aluminum foil. Place a 12 inch cast iron skillet on the stove burner, place 1/4 tsp vegetable oil into the skillet and spread the oil around the bottom of the skillet. Turn the burner under the skillet to medium-low and heat for 5 minutes.
  • When a little smoke starts coming from the skillet, turn the heat to high. Place two of the meat balls into the skillet about 3 inches apart. Taking the sauce pan by the sides, press straight down on each meat ball and smash it flat. Sprinkle each patty with salt and black pepper to taste. Cook patties for 2 minutes. At the end of the two minutes, about 3/4 of the top of the patties will no longer be pink.
  • The patties will stick to the skillet so a thin spatula will best flip the patties. Flip the patties over and cook for 15 seconds. Remove patties to bottoms of two of the hamburger buns and top the patties with cheese. Repeat the process with the remaining two patties. Place a patty on top of each piece of cheese. Top with lettuce and tomato and top with bun top to complete the hamburger.
