INGREDIENTS

  • 2 large eggs
  • 3/4 cup sugar
  • 1/3 cup vegetable oil
  • 1 cup whipping cream
  • 1 teaspoon Vanilla extract
  • 1 3/4 cup all purpose flour
  • 1 3/4 tsp baking powder
  • 1/4 tsp salt
  • 1 15 oz can peaches, diced

DIRECTIONS

  • In a bowl beat eggs and sugar until doubled in size. Add oil, whipping cream, Vanilla and whisk for 30seconds.
  • In another bowl sifted together flour salt and baking powder. Combine wet ingredients and dry ingredients. Don't over mix.
  • Add diced peaches, fold using spatula. Fill up prepared Muffins form with the batter about 3/4 full.
  • Bake in preheated oven 170 degree Celsius for about 18-20 minutes. Cool 10 minutes before serving! Enjoy with your favorite drinks.
