INGREDIENTS

  • 1/2 teaspoon sesame oil
  • 1 tablespoon canola oil
  • 2 tablespoons chili paste
  • 2 cloves garlic, chopped
  • 4 skinless, boneless chicken breast halves, sliced into 1-inch cubes
  • 1/2 cup soy sauce, divided
  • 1 onion sliced lengthwise into eighths
  • 1/2 medium head of cabbage chopped
  • 2 carrots, chopped thin
  • 8 ounces soba noodles

DIRECTIONS

  • Cook the noodles according to package instructions, drain.
  • In a large skillet, pour the sesame oil, canola oil, and chili paste. Stir for 30 seconds on medium heat. Add the garlic and stir for 30 seconds. Set aside.
  • Cook the chicken in a large skillet over medium heat with 1/4 cup of soy sauce until no longer pink. Remove from the pan and set aside.
  • Add the onion, cabbage, and carrots to the same skillet. Fry until the cabbage starts to wilt. Add the remaining soy sauce and stir to mix well. Cook, stirring occasionally, until a carrots are just tender. Return the chicken to the skillet and stir all to mix well. Add the noodles to the skillet and stir to mix well. Continue to cook to heat all through. Move to large platter and serve.
