INGREDIENTS

  • 2 light whole wheat hamburger buns
  • 5 oz canned tuna packed in water
  • 2 large eggs
  • 1/2 tsp Italian seasoning
  • 1/2 tsp table salt
  • 1/4 tsp black pepper
  • 1/4 tsp onion powder
  • 3/4 cup Panko bread crumbs, divided
  • 4 tbsp Dijon mustard
  • 4 thin slices red onion
  • 1 cup lettuce, chopped

DIRECTIONS

  • In a medium bowl, mix the tuna, eggs, Italian seasoning, salt, pepper, onion powder, and 1/2 cup of breadcrumbs until well combined. Form into two 1/2-inch-thick patties. Press remaining 1/4 cup breadcrumbs onto patties to adhere. Place patties in freezer until firm, about 20 to 30 minutes.
  • Meanwhile, preheat the air fryer to 400F.
  • Coat the air fryer basket with cooking spray. Coat the tuna patties with cooking spray. Place patties in the air fryer and cook 10 minutes, until golden brown. Serve on the buns topped with the mustard, red onion, and lettuce.
  • Serving size: 1 burger.
