INGREDIENTS

  • 4 large chicken thighs
  • 1/2 cup olive oil
  • 3 tbsp lemon juice
  • 3 tbsp soy sauce
  • 2 tbsp balsamic vinegar
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • salt, to taste
  • ground black pepper, to taste

DIRECTIONS

  • Combine all ingredients, excluding chicken, and mix well to create a marinade.
  • Poke holes into the chicken and then place chicken and marinade into a zip lock bag or other suitable container to allow the chicken to marinate.
  • Marinate chicken for at least 30 minutes, but the longer the better. Turn chicken frequently to ensure that all parts of the thighs are marinated well.
  • Remove thighs from marinade and place into the fryer set to 385°F. Cook chicken for 22 minutes, turning thighs half way through the cook.
