INGREDIENTS

  • 1/4 cup light mayonnaise
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp dill, chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp table salt
  • 1/4 tsp black pepper
  • 1 1/2 lb. tilapia fillets, 4 6oz fillets
  • 3/4 cup dried potato flakes
  • cooking spray

DIRECTIONS

  • Note: other white firm flesh fish like cod, haddock, or white fish may be substituted for the tilapia.
  • Combine mayonnaise, parsley, dill, garlic powder, salt, and pepper. Pat tilapia fillets dry with paper towels. Pour potato flakes into a pie pan or rimmed plate.
  • Preheat air fryer to 400°F. Spread 2 fillets with 1 Tbsp mayonnaise mixture each; dredge fillets in potato flakes, pressing gently to adhere. Spray air fryer with cooking spray. Arrange 2 coated fillets in air fryer and spray fillets with cooking spray. Air-fry until breading is crisp and fish is cooked through, about 10 minutes. Remove from air fryer and keep warm. Repeat process with remaining mayonnaise mixture, fillets, and potato flakes.
  • Serving size: 1 fillet.
