INGREDIENTS

  • For the Crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • For the Cheesecake Layer:
  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the Apple Layer:
  • 3 cups Granny Smith apples, peeled and diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • For the Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/3 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cubed

DIRECTIONS

  • Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan. In a bowl, mix the graham cracker crumbs, melted butter, and sugar until combined. Press the mixture firmly into the bottom of the pan. Bake for 8 minutes, then let cool.
  • In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs, one at a time, mixing after each addition. Stir in the vanilla extract. Pour the cheesecake batter over the cooled crust. In a medium bowl, toss the diced apples with sugar, cinnamon, and nutmeg. Evenly distribute the apples over the cheesecake batter.
  • In a bowl, combine the flour, oats, brown sugar, and cinnamon. Cut in the butter with a pastry cutter or fork until the mixture resembles coarse crumbs. Sprinkle the streusel topping evenly over the apples.
  • Bake the cheesecake for 50-55 minutes, or until the center is set but slightly jiggly. Allow it to cool to room temperature, then refrigerate for at least 4 hours or overnight before serving. Slice and serve chilled. For extra indulgence, drizzle with caramel sauce.
