Baked Salmon with Chermoula Over Broccoli Recipe

INGREDIENTS

  • 1/4 ounce Cilantro
  • 1/4 ounce Parsley
  • 1 clove Garlic
  • 1 fruit (2-1/8" diameter) Lemon
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Paprika
  • 1/4 teaspoon Coriander Seed
  • 1/8 teaspoon Red or Cayenne Pepper
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 12 ounces Broccoli
  • 12 ounces boneless, raw Salmon

DIRECTIONS

  • Preheat oven to 350°F.
  • Line a sheet pan or glass cooking dish with aluminum foil and lightly grease it with oil.
  • Finely mince the cilantro, parsley and garlic; place into a bowl. Zest and juice the lemon and place into the bowl with the herbs and garlic. Add the ground cumin, paprika, coriander, and cayenne. Stir in 2 tbsp olive oil until well blended then season with the salt and black pepper; set aside.
  • Place the broccoli in a single layer on the pan. Place broccoli into the oven and bake for 10 minutes. Remove the pan with broccoli from the oven. Place the fish onto the pan and cover with the prepared chermoula. Return broccoli and fish to the oven and bake for an additional 15 minutes until the broccoli is softened and the fish is cooked through.
