INGREDIENTS

  • 1 lb. flank steak or London broil
  • 2/3 cup Soy Sauce
  • 2/3 cup Worcestershire Sauce
  • 1 Tbl. Honey
  • 2 tsp. freshly ground Black Pepper
  • 2 tsp. Onion Powder
  • 1 tsp. Red Pepper Flakes
  • 1 tsp. Liquid Smoke

DIRECTIONS

  • Cut meat into strips about 1/8 inch x thickness of meat x 6 inches long. Meat will be easier to cut into strips if it is placed in freezer until just about, but not quite, frozen.
  • Combine all marinade ingredients and place into zip top bag. Place meat into bag and massage bag and ingredients to coat the meat well with the marinade. Place the meat in the refrigerator and marinate for at least 3 hours and up to 6.
  • Remove the meat from the marinade, drain and pat dry the meat. Jerky may be made a couple of ways, the most used probably being the standard dehydrator. With the dehydrator, the meat is dried with air and heat until the meat is dried to the desired "dryness" - the jerky is also "cooked" to a degree.
  • The best jerky is made with relatively cool temperatures and a lot of wind. A method is to use a box fan, standard furnace filters (use cellulose instead of fiberglass if possible) and a couple of bungie cords. Lay the filters on a flat surface and place the meat strips into the grooves of the filter so the strips are laid out flat, long and not overlapping. Once all the meat is on filters, stack the filters on top of each other. Top the stack of filters with a "meatless" filter. Lay the box fan flat on the same flat surface the filters are on with the motor of the fan being in the down position. Place the filters on top of the box fan with the "meatless" filter being on top. Secure the filters to the fan with a couple of bunge cords. Stand the fan upright along with the filters. The fan can be placed in a window to allow the smell of the marinade to go outside, or the fan may be just left inside. Turn the fan on high. The filter jerky process will take about 12 hours.
