INGREDIENTS

  • 2 cups all-purpose flour
  • 3/4 tsp. salt
  • 4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 2 Tbl. butter
  • 4 Tbl. lard or shortening
  • 1 cup buttermilk

DIRECTIONS

  • To medium bowl, all first 4 ingredients and mix well. Add butter and lard.
  • Using hand, toss butter and lard in the flour mixture and using fingers gently work the butter and lard throughout the flour mixture.
  • Make a large indention (pit) in the center of the flour mixture. Pour the buttermilk into the pit. Using a spatula or your hand, gently work the outside of the flour mixture into the buttermilk until all is fully combined. Preheat oven to 450°F.
  • Lightly flour a cutting board and turn mixture out onto board. Fold mixture in on itself about 8 times, flattening to about 1/2 inch thickness each time. Using a biscuit cutter dipped in flour, press cutter into dough and turn the cutter to cut the dough. Lift the cutter up and away from the dough. Remove biscuit from cutter and place on baking pan/cookie sheet. Repeat biscuit cutting process. Place biscuits so their sides touch. Bake in oven for 10 minutes, rotate in oven and cook for another 10 minutes. Enjoy. NOTE: Biscuits may be frozen for later use.
