INGREDIENTS

  • 3 tsp. melted butter
  • 1/3 cup packed brown sugar
  • 1 1/2 tsp. grated orange rind
  • 2 cups fresh (or frozen) blackberries
  • 1 1/4 cup all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2/3 cup white sugar
  • 2 Tbsp. softened butter
  • 1 egg
  • 3/4 tsp. vanilla
  • 1/2 cup milk

DIRECTIONS

  • Preheat oven to 350°F. Spread the 3 tsp. of melted butter in bottom of 9” round cake pan Sprinkle evenly with brown sugar, then orange rind and blackberries. Combine flour, baking powder and salt in a mixing bowl.
  • In another bowl beat white sugar into softened butter. Add egg and vanilla and beat well. Alternate adding the flour mixture into creamed butter/sugar mixture with the milk (start and end with flour). Spoon batter over berries.
  • Bake at 350°F for 40 minutes. Cool in pan on wire rack for 5 minutes.
  • Loosen cake edges with knife. Invert cake onto plate.
