INGREDIENTS

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon each baking soda and ground nutmeg
  • 1/2 cup sugar
  • 1/2 cup chopped pecans
  • 2 eggs
  • 1/4 cup milk
  • 1/2 cup orange juice
  • 2 teaspoons grated orange rind
  • 1/3 cup butter or margarine (melted and cooled)
  • 1 cup blueberries

DIRECTIONS

  • Preheat oven to 350° F. In a large bowl stir together flour, baking powder, salt, baking soda, nutmeg, and sugar. Mix in pecans.
  • In a medium bowl beat eggs with milk, orange juice, and orange rind; blend in butter. Add egg mixture to flour mixture, mixing just until dry ingredients are moistened. Gently fold in blueberries. Spread in a greased, lightly floured, 4 1/2- by 8 1/2-inch loaf pan.
  • Bake until loaf is golden brown and a wooden skewer inserted in center comes out clean (55 minutes to 65 minutes).
  • Let cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
