INGREDIENTS

  • 2 chicken legs, or pieces of choice
  • 2 chicken thighs, or pieces of choice
  • 1 cup House-Autry chicken breading
  • 1 quart vegetable oil, for deep-frying
  • salt, to taste
  • pepper, to taste

DIRECTIONS

  • NOTE: The ideal set-up for deep-frying chicken is to use a heavy pot which will hold the oil and the chicken being cooked without crowding. A thermometer that clips to the pot to give the oil temperature at all times is needed. The oil should be heated to 375°F before adding the chicken and the heat should be the highest possible on adding the chicken. Adjust the heat to maintain 350°F oil temperature once the chicken is added.
  • Remove the chicken from the refrigerator and maintain at room temperature for 15 minutes. Pat the chicken dry with paper towels. Place the breading into a plastic bag, like the small plastic used for produce. Place individual pieces of chicken into the bag and toss to coat the whole piece with breading. Remove to a plate. Repeat with additional pieces. Let the chicken rest for 10 minutes.
  • While the chicken is resting, heat the oil to 375°F. When the oil is around 340°F, place each piece of chicken back into the breading bag and toss to coat the pieces well, shaking off excess breading before return to the plate.
  • When the oil is at 375° carefully lower individual pieces of chicken into the oil. Spread the chicken to prevent the pieces from sticking together. Once all the pieces are in the oil, gently attempt to move each piece to ensure they are not sticking. Cook for 12 minutes. Remove a few individual pieces and check with thermometer to ensure chicken is at least 165°F. Cook longer if necessary to obtain 165°F. Rest chicken 5 minutes before service.
