INGREDIENTS

  • 1 15 oz can sliced potatoes
  • 1 1/2 tbsp olive oil
  • 1/2 large onion, chopped
  • 1/2 tsp garlic powder

DIRECTIONS

  • Heat olive oil in a sauce pan over medium heat. When the olive oil begins to shimmer, add the onion stirring well to coat the onion with oil. Cook the onion, stirring occasionally, until the onion is soft. Remove the onion from the pan and set aside.
  • Drain most of the liquid from the potatoes. Place the potatoes with remaining liquid into the pan over medium heat. Cook the potatoes, stirring occasionally, allowing the liquid to cook down leaving just enough liquid to prevent the potatoes from sticking. Continue cooking the potatoes, adding water if necessary, until the potatoes show evidence of browning.
  • When the potatoes begin to brown, return the onions to the pan. Add water if necessary to maintain a little moisture.
  • Add the garlic powder to the pan and stir all to mix well. Cook for about 3 minutes longer. Serve and enjoy.
