INGREDIENTS

  • 2 pounds skinned fish fillets (all trout or a combination of trout, whitefish, or pike)
  • 1/2 cup chopped onion
  • 1/3 cup chopped carrot
  • 1 egg, beaten
  • 2 teaspoons vegetable oil
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons matzo meal or white cornmeal
  • 3 tablespoons ice water
  • Watercress

DIRECTIONS

  • Place all ingredients except 1 tablespoon of the ice water and watercress in a blender or food processor; puree until the consistency of a paste. Add remaining ice water if necessary (mixture should hold together and be easy to handle).
  • Form fish mixture into oval patties, using 1/2 cup for each. Place on a lightly oiled cookie sheet.
  • Broil 4 inches from heat until patties are well browned and slightly puffed (8 to 10 minutes on each side). Serve immediately.
  • Garnish with watercress.
