INGREDIENTS

  • 3 medium parsnips, peeled
  • 2 Tbl. butter, melted
  • 1 tsp. ground basil
  • Pinch ground thyme
  • 1 clove garlic, minced

DIRECTIONS

  • Preheat oven to 350°F. After peeling the parsnips, cut off a small portion of either end. Cut the parsnips crosswise to make about 3 inch long logs. Cut each log in half, lengthwise. Lay the resulting halves flat on a cutting board. Slice each log-half into long strips about a 1/4 - 1/2 wide.
  • Combine the butter and other ingredients in a bowl and stir to mix well.
  • Line a baking sheet with parchment paper or spray the sheet with cooking oil. Place the strips of parsnip into the bowl with the butter mixture and toss to coat well.
  • Remove the parsnip strips from the bowl and place onto the baking sheet leaving space between the strips. Place the sheet with the parsnips into the oven on the middle rack. Bake initially for 20 minutes and check the strips for tenderness. Once the parsnips are tender remove from oven and serve.
