INGREDIENTS

  • 1 tbsp canola oil
  • 1 medium onion, thinly sliced
  • 1 lb. chicken breast, cut into cubes
  • 1/2 medium bell pepper, thinly sliced
  • 1/2 tsp salt
  • 1 pinch black pepper
  • 8 slices low-fat American cheese
  • 4 hoagie buns
  • margarine
  • garlic powder
  • cajun seasoning

DIRECTIONS

  • Slice the chicken breast horizontally into 1/4 inch fillets. Cut the fillets into 1/4 inch wide strips. Cut the strips horizontally into 1/4 inch cubes.
  • Spread the cut sides of the buns with margarine and then lightly sprinkle with garlic powder. Place a large skillet over medium heat. Add the oil to heat. Once the oil is at a slight shimmer, add the onion and the pepper and toss to coat with oil. Cook, stirring occasionally until the onion and pepper begins to soften. Add the chicken to the skillet and stir well to break chicken cubes apart.
  • Cook until the chicken is cook through, stirring occasionally. Sprinkle the mixture in the skillet liberally with the Cajun seasoning.
  • Place the hoagie onto a heated griddle to toast slightly. Once toasted, remove the hoagies to plates. Place two slices of cheese onto the bottom of each bun. Top the cheese with the chicken mixture. Salt and pepper to taste. Serve and enjoy!!
