INGREDIENTS

  • 8 medium sweet potatoes
  • 1 cup Karo dark corn syrup
  • 1/2 cup dark brown sugar, firmly packed
  • 2 tbsp butter
  • vegetable oil

DIRECTIONS

  • Heat oven to 400°F. Lightly oil the skin of the sweet potatoes with vegetable oil. Use the tines of a fork to pierce the skin of the potatoes a few times on each potato. Place the potatoes onto a sheet pan with space between the potatoes. When oven is at temperature, place the sheet pan of potatoes onto the middle rack and bake for 45 minutes. The potatoes will not be fully done at that time. Reduce heat to 300°F.
  • Place the syrup, sugar and butter into a sauce pan and stir to mix the ingredients well; bring to a gentle boil. Reduce heat to keep the syrup mixture warm. Allow the potatoes to cool enough to handle.
  • Once cooled, peel the potatoes. Cut the potatoes in half lengthwise. Pour half the syrup mixture into a shallow baking dish big enough to accommodate the potatoes. Add the potatoes to the baking dish. Top the potatoes with the remaining syrup mixture.
  • Bake the potatoes for 30 minutes, basting the potatoes with the syrup mixture every 10 minutes. Makes 8 servings.
