INGREDIENTS

  • 12 medium sweet potatoes
  • 1 cup Karo® corn syrup
  • 1/2 cup brown sugar, packed
  • 2 tbsp butter
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • Pinch nutmeg
  • 1/4 tsp bourbon

DIRECTIONS

  • Heat oven to 400°F. While oven is heating, use the tines of a fork to puncture the skin of the potatoes. Place the potatoes onto a large sheet pan. When oven is at temperature, place the sheet pan of potatoes into the oven on a rack positioned in the middle of the oven. Bake the potatoes for 1 hour and 10 minutes or until there is no resistance to fork tines inserted into the potatoes.
  • Allow the potatoes to cool enough to remove the peel. Cut the peeled potatoes into bite sized pieces and place into a large a bowl. Use a potato masher or electric mixer to cream the potatoes.
  • Place into another pan the remaining ingredients. Place pan with corn syrup mixture over medium low heat and stir well. Heat the corn syrup ingredients until the brown sugar melts. Stir ingredients to mix really well.
  • Add the potatoes to the corn syrup mixture and gently stir to thoroughly mix the potatoes with the corn syrup mixture. Place the potatoes over medium-low heat and heat the potatoes through, gently stirring occasionally. Serve.
