INGREDIENTS

  • 4 parsley sprigs
  • 3 peppercorns
  • 2 garlic cloves
  • 2 scallions or green onions, cut in pieces
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon thyme
  • 2 tablespoons peanut oil
  • 2 cups rice
  • 4 1/2 cups chicken broth
  • 1 bay leaf
  • 1 green hot pepper or 1/2 teaspoon- cayenne or red pepper

DIRECTIONS

  • In a mortar, pound parsley, peppercorns, garlic, scallions, salt, and thyme to a paste. Set aside.
  • Heat oil in a large, heavy saucepan; add rice. Stir until all the rice is coated with oil and turns chalky.
  • Add seasoning paste and chicken broth; bring to a boil. Reduce heat and add bay leaf and pepper. Cover saucepan and cook undisturbed for 20 minutes.
  • Remove the cover; continue to cook over low heat for 5 minutes, or until no liquid remains. Discard bay leaf and whole pepper. Fluff rice and serve.
