INGREDIENTS

  • 2 8oz chicken breasts, boneless and skinless
  • 1 Roma tomato sliced, 1/4-inch slices
  • 2 slices mozzarella cheese, 1/4-inch x 2 1/2-inch x 5-inches
  • 2 tbsp mayonnaise
  • 2 tbsp yellow mustard
  • salt, to taste
  • ground black pepper, to taste

DIRECTIONS

  • Lay breasts on cutting board with narrow end toward you and the bigger end away from you. Carefully butterfly each breast, cutting horizontally, from one end to the other and across the entire breast, NOT cutting all the way through but leaving just enough whole breast to open the breast up to lay flat on the cutting board. Cover each breast with plastic wrap and gently pound to about 1/2-inch thickness.
  • Combine the mayonnaise and mustard. Salt and pepper each breast to taste. Brush each breast with the mayonnaise mixture to cover completely. Preheat the oven to 390°F.
  • On the left half of each breast, lay 4 slices of tomato, slightly overlapping, from the big end down toward the smaller end. Top the tomatoes with one slice of cheese. Fold the right side of the breast up and over the breast portion with the tomato and cheese. Secure the cut breast halves together with toothpicks or kitchen twine.
  • Place the breasts onto a sheet pan lined with parchment paper or foil and brush with any remaining mayonnaise mixture. Bake for 30 minutes. Check the internal temperature of the breasts to ensure a temperature of 165°F.
