INGREDIENTS

  • 2 skinless boneless chicken breasts cut in 1/2 inch cubes
  • 1 cup onion, chopped, medium
  • 1 cup celery, chopped medium
  • 1/2 tsp. oregano
  • 1/2 tsp. basil
  • 1/2 lb. Penne Rigate pasta
  • 2 tsp. chicken bouillon
  • 7 cups water
  • salt and pepper to taste

DIRECTIONS

  • Add onion, celery and one cup water to a large pot. Cover and bring to a boil. Cook for 5 minutes, stirring occasionally. Caution: do not let water completely evaporate.
  • Add 6 cups water to onion and celery mixture. Add chicken and stir well. Add Penne Rigate and stir well.
  • Add oregano, basil and chicken bouillon. Stir well. Bring to a boil.
  • Boil for 12 minutes. Taste test. Add salt and pepper to taste. Enjoy!!
