INGREDIENTS

  • 1 Tbl. olive oil
  • Chicken pieces, optional number and pieces
  • salt and pepper
  • 1 medium red bell pepper
  • 5 pickled cherry peppers
  • 8oz sweet Italian sausage
  • 1 onion, thinly sliced
  • 5 cloves garlic, minced
  • 1 tsp. dried oregano
  • 1 Tbl. flour
  • 3/4 cups chicken broth
  • 2 Tbl. brine from pickeled cherry peppers
  • Fresh parsley chopped, optional

DIRECTIONS

  • Bell pepper: remove stem and seeds. Cut into strips. Cherry peppers: remove stem. Use a spoon to remove seeds. Cut into strips. Italian sausage: remove casings. Break sausage into bite-size chunks.
  • Heat olive oil in large skillet over medium-high heat. Liberally salt and pepper chicken on both sides. Place chicken pieces into skillet, skin side down, and cook for 5 minutes. Flip chicken pieces and cook another 3 minutes. Remove chicken from skillet and set aside. Add Italian sausage to skillet and cook, stirring occasionally, for abut 3 minutes or until browned. Remove and set aside reserving 1 Tbl. of sausage grease.
  • Preheat oven to 350°F. Return skillet to heat and add sausage grease. Add bell pepper and onion and cook for 5 minutes. Add garlic, dried oregano and cherry peppers and cook for about 1 minute. Sprinkle all with 1 Tbl. flour. Stir to mix all. Add 3/4 cup chicken broth. Stir well. Add cherry pepper brine. Stir well.
  • Cook until sauce thickens slightly. Return sausage to skillet. Return chicken to skillet on top of sausage and peppers mixture. Place in oven and cook, uncovered, for 30 - 35 minutes. Check chicken using a thermometer or by cutting to ensure chicken is done. Garnish with chopped fresh parsley. Serve and enjoy!
