INGREDIENTS

  • 1/2 C chopped onion
  • 1/2 C chopped celery
  • 1 C sliced carrots
  • 7 C water
  • Chicken cut into 1/2 inch cubes (2 chicken breasts)
  • 1/2 lb spaghetti noodles broken in half
  • 1/2 t dried basil
  • 1/2 t dried oregano
  • salt and pepper to taste

DIRECTIONS

  • Place vegetables and 1C water into a 2qt or larger pan, cover Bring vegetables to a boil, reduce heat and simmer 5 minutes.
  • Add chicken, 6C water, basil and oregano, stir, bring to a boil. Once at a boil, gradually add noodles, stirring to prevent noodles from sticking together.
  • Cover and boil 15 minutes, stirring occasionally. Add salt and pepper to taste, serve.
