INGREDIENTS

  • 2 bone-in pork chops, 3/4-in thick trimmed of fat
  • 2 tsp vegetable oil
  • 1 1/4 tsp chili powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup Roma tomatoes, chopped
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1/2 tsp dried oregano
  • 1/4 tsp cumin, ground

DIRECTIONS

  • Heat oil in frying pan over medium heat.
  • Season pork chops with 1/4 tsp chili powder, salt and pepper. Add chops to the hot pan.
  • Cook pork chops for about 5 minutes per side until browned.
  • Place remaining ingredients into a bowl and gently stir to mix well; add the frying pan. Reduce heat to medium-low. Cook, covered, for about 5 minutes until pork is not longer pink inside or internal temperature is 165°F. Serves 2.
