INGREDIENTS

  • 1 cup diced cooked beets
  • 1 cup diced tart apple, not peeled
  • 1 cup orange sections
  • 1 cup sliced bananas
  • 1 cup diced pineapple (fresh or canned)
  • Juice of 1 lime
  • Oil and Vinegar Dressing
  • Shredded lettuce
  • 1/2 cup chopped peanuts
  • Seeds from 1 pomegranate

DIRECTIONS

  • Drain beets well. Combine beets, apple, oranges, bananas, and pineapple. Refrigerate until ready to serve.
  • Add lime juice to beet-fruit mixture. Add desired amount of dressing and toss until evenly mixed and coated with dressing.
  • To serve, make a bed of shredded lettuce in salad bowl. Mound salad on top. Sprinkle with peanuts and pomegranate seeds.
