INGREDIENTS

  • 2 unbeaten egg whites
  • 1 1/2 cups firmly packed brown sugar
  • Dash salt
  • 5 tbl. water
  • 1 square (1 ounce) unsweetened chocolate
  • 1 tsp. vanilla
  • 1 1/2 cups moist, sweetened coconut

DIRECTIONS

  • Melt and cool the unsweetened chocolate. Combine egg whites, sugar, salt and water in top of double boiler, beating with mixer until thoroughly mixed.
  • Place over rapidly boiling water.
  • Beat constantly with mixer and cook 7 minutes or until frosting will stand in peaks. Remove from boiling water. Fold in chocolate and vanilla - do not beat mixture.
  • Spread on cake. Sprinkle with coconut while frosting is still soft.
