Cole Slaw with Duke's Recipe

INGREDIENTS

  • 1 medium green cabbage
  • 6 tbsp mayonnaise
  • 6 tbsp Duke's® Cole slaw dressing
  • salt and pepper to taste

DIRECTIONS

  • Remove outer leaves from cabbage. Cut the cabbage in half, top to bottom. Using a sharp knife, carefully cut the core (a solid 'Ʌ' shape) in each half of the cabbage and remove.
  • Cut the two half of cabbage into long slices about 1-inch wide. Cut the slices in half crosswise. Place the cabbage into the bowl of a food processor and pulse to chop the cabbage. Continue pulsing until there are no big pieces of cabbage left.
  • Put the mayonnaise and the Cole slaw dressing into the processor bowl. Pulse until ingredients are well mixed and the cabbage pieces are a little larger than a grain of rice.
  • Place the Cole slaw into a bowl, cover and place in refrigerator to chill. When ready to serve, remove from refrigerator, stir to mix well. Add salt and pepper to taste.
