INGREDIENTS

  • 1 tablespoon Oil
  • 1 small Onion chopped
  • 3 Tomatoes peeled, chopped
  • 1 1/2 teaspoons Capers
  • 1 Bay Leaf
  • 1/2 teaspoon Sugar
  • 1/2 teaspoon Salt
  • 1 large Green Pepper cored, seeded and cut into strips
  • 2 tablespoons Oil
  • 1 pound fresh Shrimp peeled and deveined, chilled
  • 2 - 3 tablespoons freshly squeezed Lime Juice
  • 1/3 cup minced fresh Cilantro, optional

DIRECTIONS

  • Add oil to medium pan. Place on stovetop over medium heat. When oil is hot and shimmering, add onion and sauté until tender, but not browned.
  • Add tomatoes, capers, bay leaf, sugar and salt. Bring to boil. Reduce heat. Cover and simmer 15 minutes. Add green peppers. Cook 5 minutes longer.
  • Heat 2 tablespoons oil in another skillet. Place over medium heat. When oil is hot and shimmering, add cleaned shrimp. Cook over medium heat until just pink. Do not over cook.
  • Sprinkle lime juice over shrimp. Add prepared sauce. Heat 3 - 4 minutes longer. Top with cilantro and serve immediately.
