INGREDIENTS

  • 1 3 1/2 lb. chicken, disjointed
  • 2 Tbsp Kosher salt
  • 2 tsp freshly ground black pepper
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 2 tsp sumac
  • 2 cups all-purpose flour
  • 2 Tbsp cornstarch
  • 1 cup low-fat buttermilk
  • 1 egg, beaten lightly
  • 1 oz (2 Tbsp) bourbon
  • oil for deep frying

DIRECTIONS

  • Place chicken pieces over rack on sheet pan and sprinkle both sides with 2 tablespoons kosher salt. Let chicken sit a room temperature, uncovered, for 30 minutes.
  • Combine black pepper, cayenn pepper, garlic powder and sumac to make a 2 tablespoons spice blend. Sprinkle both sides of the chicken pieces with 1 tablespoon of the mixture. Place chicken in refrigerator, on sheet pan, uncovered, for at least 4 hours and preferably overnight. 30 minutes before cooking, remove chicken from refrigerator.
  • Place flour into a large mixing bowl. Add remaing tablespoon of spice mixture and stir to mix well. Add cornstarch and mix well. Add buttermilk to another bowl. Add egg and bourbon to buttermilk and mix well. Dip each piece of chicken, individually, into the buttermilk mixture and then into flour mixture, coating well. Place chicken back onto the sheet pan and repeat to coat all pieces.
  • Place oil into large pot and heat to 350°F. Place 3 pieces of dark meat chicken into oil and cook while maintaining at least 325°F oil for 12 to 13 minutes. Check internal temperature and ensure at least 155°F. Cook remaining chicken in batches. Hold cooked chicken in warm oven if desired while remaining chicken cooks.
