INGREDIENTS

  • 1 1/2 cups chopped fully cooked ham
  • 1 medium onion. chopped (1/2 cup)
  • 1/4 cup chopped bell pepper
  • 1 package (10 ounces) frozen asparagus or broccoli cuts
  • 8 eggs or 2 cups fat-free cholesterol-free egg product
  • 2 cups fat-free (skim) milk
  • 1 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried tarragon leaves
  • 1 cup shredded Cheddar cheese (4 ounces)

DIRECTIONS

  • Heat oven to 425°F. Generously grease bottom of rectangular baking dish, 13 X 9 X 2 inches, with shortening or cooking spray. Sprinkle ham, onion, bell pepper and frozen asparagus in baking dish.
  • Beat eggs, milk, flour, Parmesan cheese, salt, pepper and tarragon with fork or wire whisk in medium bowl until smooth; pour over ham mixture.
  • Bake uncovered about 20 minutes or until knife inserted into center comes out clean. Sprinkle with Cheddar. Broil 3 to 5 minutes or until cheese is melted. Let stand 5 minutes before cutting.
