INGREDIENTS

  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • For the Cowboy Butter Sauce:
  • 1/2 cup unsalted butter (1 stick)
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon fresh parsley, chopped
  • Salt & pepper, to taste
  • Juice of 1/2 lemon
  • For the Pasta:
  • 12 oz linguine
  • Salt for pasta water
  • Grated Parmesan cheese, for garnish

DIRECTIONS

  • Cook linguine according to package directions in salted water until al dente. Drain and set aside, reserving about 1/2 cup pasta water.
  • In a bowl, season chicken slices with smoked paprika, garlic powder, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 5–7 minutes until browned and cooked through. Remove chicken from skillet and set aside.
  • In the same skillet, melt butter over medium heat. Add minced garlic, smoked paprika, onion powder, and crushed red pepper flakes. Cook for 1–2 minutes until fragrant. Stir in parsley, lemon juice, salt, and pepper.
  • Add cooked chicken and linguine to skillet. Toss to coat, adding reserved pasta water a little at a time until desired sauce consistency is reached.
