INGREDIENTS

  • white and brown meat from 4 small fresh dressed crabs, about 1 lb.
  • 1 small red (bell) pepper, seeded and finely chopped
  • 1 small red onion, finely chopped
  • 2 tbsp drained capers
  • 2 tbsp chopped fresh coriander (cilantro)
  • grated rind and juice of 2 lemons
  • Tabasco sauce, to taste
  • salt and ground black pepper
  • lemon rind strips, to garnish
  • For the rocket (arugula) salad:
  • 1 1/2 oz. rocket leaves
  • 2 tbsp sunflower oil
  • 1 tbsp fresh lime juice

DIRECTIONS

  • Put the white and brown crab meat, red pepper, onion, capers and chopped coriander in a bowl. Add the lemon rind and juice and toss gently to mix together. Season with a few drops of Tabasco sauce, according to taste, and a little salt and pepper.
  • Divide the rocket leaves among four plates. Mix together the oil and lime juice in a small bowl. Dress the rocket leaves, then pile the crab salad on top and serve garnished with lemon rind.
  • Cook's Tip: If the dressed crabs are really small, pile the salad back into the shells to serve.
