INGREDIENTS

  • 1 pound peeled crawfish tails, fresh or frozen
  • 1/2 cup butter or margarine
  • 1/4 cup olive oil
  • 1 clove garlic, minced
  • 1 cup fresh sliced mushrooms
  • 1/2 cup chopped green onions and tops
  • 1/4 cup chopped parsley
  • 1 package (8 ounces) linguine, cooked
  • Parmesan cheese (optional)

DIRECTIONS

  • Thaw crawfish if frozen. Melt butter with olive oil in large skillet. Saute garlic and mushrooms until mushrooms are tender. Add crawfish tails and green onions.
  • Cook 5 minutes over low heat. Stir in chopped parsley.
  • Serve over hot cooked linguine; sprinkle with Parmesan cheese.
  • Note: The crawfish mixture also makes an excellent filling for omelets. If using in omelets, omit the olive oil.
