INGREDIENTS

  • 8 sprigs fresh thyme
  • 4 lb. Yukon gold potatoes, cut into 1-in. pieces
  • 6 cloves garlic, peeled and smashed
  • 3 cups heavy cream
  • 1 1/2 cups whole milk
  • Kosher salt and pepper
  • 1/4 cup (1/2 stick) unsalted butter, cut into small pieces

DIRECTIONS

  • Tie the thyme together with kitchen twine or thread. Place in a large pot along with the potatoes and garlic. Add the cream and milk and bring to a boil. Add 2 tsp. salt, reduce heat and simmer, stirring occasionally, until the potatoes are very tender and falling apart, 20 to 25 minutes.
  • Remove from the heat and discard the thyme stems. Using a sturdy spatula or wooden spoon, mash the potatoes until smooth. Add butter and 1/2 tsp. pepper and stir until combined.
