INGREDIENTS

  • 4 cups fat-free milk
  • 2 teaspoons unsalted butter
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1 cup yellow cornmeal
  • 1/2 cup shredded sharp white Cheddar cheese (2 ounces)

DIRECTIONS

  • In medium sauce pot, combine milk, butter, 1/4 teaspoon black pepper and 1/8 teaspoon salt.
  • Heat to boiling over medium to medium-high heat, stirring occasionally.
  • Gradually whisk in cornmeal until incorporated.
  • Reduce heat to low and cook 4 minutes, whisking occasionally. Remove from heat; stir in cheese. Cover to keep warm.
