INGREDIENTS

  • 1 c. diced celery
  • 3 sm. cloves of garlic, minced
  • 1 c. chopped onion
  • 1/2 c. chopped bell pepper
  • 1 stick margarine
  • 1/2 c. chopped green onion tops
  • 1 can cream of mushroom soup
  • 1 can tomato soup
  • 6 sprigs of parsley, chopped
  • 1 lb. cooked cleaned shrimp
  • 3 slices bread, moistened
  • 3 c. cooked rice
  • Salt and pepper to taste
  • 1/4 c. bread crumbs
  • 1/4 c. grated Parmesan cheese

DIRECTIONS

  • Saute the celery, garlic, onion and bell pepper in margarine in a saucepan until tender. Add the green onion tops, soups, parsley and shrimp and cook over low heat for 5 minutes. Add bread and rice and cook for 15 minutes longer. Add the salt and pepper. Turn into 2-quart casserole and sprinkle with bread crumbs and cheese. Cover. Bake in 375-degree oven for 30 minutes. Uncover and bake for 5 minutes longer.
