INGREDIENTS

  • 2 - 3 lb. pork roast (Boston Butt)
  • 1 medium onion, sliced
  • 2 tsp garlic, minced
  • 2 cups chicken broth
  • 1 tsp ground cumin
  • 2 medium potatoes, peeled and chopped
  • 3 medium carrots, peeled and cut into 1/4 inch rounds
  • 2 celery stalks, chopped

DIRECTIONS

  • Grease the bowl of the cooker. Place the onion and garlic on the bottom of the bowl.
  • Place the roast on top of the onions. Salt and pepper both sides of the roast. Sprinkle the cumin over the top of the roast.
  • Pour the broth around the roast. Place the vegetables around the roast.
  • Ideally, insert the cabled probe of an instant read thermometer into the center of the roast. Set the thermometer to 200°F. Place the lid onto the cooker and turn the temperature to low. Roast will take 6 - 8 hours to reach 200°F or when thermometer says the temperature has been reached.
