INGREDIENTS

  • 1/2 recipe Danish Pastry Dough (search recipes)
  • 1 egg beaten with 1 teaspoon water
  • 1 cup Prune, Date, Apricot, or Apple Filling (search recipes)
  • For Icing:
  • 1 1/2 cups confectioners' sugar
  • 3 tablespoons water
  • 1/4 teaspoon vanilla extract

DIRECTIONS

  • Roll dough on a lightly floured surface into a rectangle 12 by 16 inches. Cut lengthwise into 3 strips, 4 by 16 inches, then cut each strip into four 4-inch squares.
  • Brush the edges of each square with some of the beaten egg, then place a generous tablespoon of the filling in the center of each. Fold the squares in half diagonally, to make triangular-shaped turnovers, and press the edges firmly with your fingers to seal. Place about 2 inches apart on baking sheets, cover with a towel, and let rise until puffy and nearly doubled in bulk (about 45 minutes). Brush with some of the beaten egg.
  • Preheat oven to 400° F. Bake until golden brown and puffy (about 12 to 15 minutes).
  • Transfer to racks to cool and brush each with icing while still warm.
