INGREDIENTS

  • 3 1/2-inch thick bone-in pork chops
  • 1 cup House-Autry Chicken Breader
  • Oil for frying

DIRECTIONS

  • Put 4-inches of oil into a heavy bottom large pot. Heat the oil to 360°F. It is recommended that a candy thermometer which may be clipped to the inside of the pot is used. If a thermometer is not available, a dry wooden spoon inserted into the oil will give off a steady stream of bubbles when the oil is hot enough.
  • Meanwhile, the chops must be coated with the breader. An excellent way to ensure even coating is to place the breader into a plastic bag such as the bags used in grocery store produce departments. Once the breader is in the bag, place a chop into the bags and close the mouth of the bag and gently toss the chop to coat. Remove chop from bag and set aside. Repeat with remaining chops.
  • While the oil is heating the first coating of breader will begin to show moisture. When the oil approaches 360°F, repeat the breading process with the chops to put a second coating on the chops.
  • When the oil is heated, gently place the chops into the hot oil. The chops will be approaching 170°F when they begin to float, about 6 minutes. Best to verify internal temperature with a quick read thermometer. Pork is done at 145°F but I prefer mine at 170°F.
