INGREDIENTS

  • 3oz cooked skinless boneless chicken breast, cut into thin strips
  • 1 cup cooked red bell pepper, cut into thin strips
  • 1/2 cup refried beans
  • 1/4 cup salsa
  • 1 lime wedge
  • 1 tbsp cilantro and/or sliced scallions

DIRECTIONS

  • Warm chicken and pepper strips; serve with warmed beans and salsa.
  • Squeeze fresh lime over top; garnish with cilantro and/or scallions.
  • Serve with optional tortillas or large lettuce leaves to make lettuce wraps.
  • Makes 1 serving.
