INGREDIENTS

  • 1 lb ground beef
  • 2 chopped bell peppers
  • 1 finely chopped onion
  • 3 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 (15 oz) can low-sodium beef broth
  • 1 (15 oz) can diced tomatoes
  • 1 cup uncooked white rice (long grain)
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3/4 cup mozzarella cheese, shredded
  • 3/4 cup cheddar cheese, shredded

DIRECTIONS

  • In a large skillet, cook ground beef over medium heat until well browned. Drain excess grease. Set meat aside.
  • Return the skillet to medium heat and add the bell peppers, onion, and garlic and cook, stirring occasionally, until the vegetables are tender.
  • Stir in Worcestershire sauce, beef broth, diced tomatoes, rice, Italian seasoning, salt, and pepper. Return the ground beef to the skillet and mix all well. Cover and simmer for 20-25 minutes or until rice is soft and liquid is absorbed. Heat oven to 375°F.
  • Transfer to a casserole dish, top with shredded mozzarella and cheddar, and bake until cheese is melted and bubbly. Enjoy this hearty and cheesy casserole!
