INGREDIENTS

  • 2/3 cup Oil and Vinegar Dressing (search recipes)
  • 1/3 cup salsa
  • 3 cups cooked beef cut into thin strips
  • 1 head green leaf lettuce, torn into pieces
  • 2 tomatoes, cut into wedges
  • 1 cup shredded red cabbage
  • 15 pimiento-stuffed green olives, cut in half
  • 1/2 cup garbanzo beans, drained
  • Crumbled queso fresco or feta cheese
  • Cebolla en Lima Onions in Lime Juice (search recipes)

DIRECTIONS

  • In a small bowl combine dressing and salsa. Place meat in a medium bowl and pour marinade over the meat; cover and marinate in refrigerator for several hours.
  • In a large bowl mix together the lettuce, tomatoes, cabbage, olives, and garbanzos. Add the meat and dressing and toss.
  • Serve garnished with Cebolla en Lima (marinated onions) and crumbled cheese.
