INGREDIENTS

  • 3/4 cup teriyaki sauce
  • 1 1/2 lb. chicken breast, skinless, boneless
  • 12oz packaged broccoli florets
  • 2 cups long grain brown rice, precooked
  • 3 medium scallions, thinly sliced

DIRECTIONS

  • In a slow cooker, combine the teriyaki sauce and chicken, turning the chicken over to coat. Cover and cook until the chicken is tender, 1 to 2 hours on High or 3 to 4 hours on Low.
  • Remove the chicken from the slow cooker and cool slightly. Stir the broccoli into the sauce in the slow cooker; cover and cook on High until crisp-tender, 30 to 40 minutes.
  • Shred the chicken and stir into the broccoli mixture. Serve the chicken mixture over the rice; sprinkle with the scallions.
  • Serving size: 1 1/2 cups chicken mixture and 1 cup rice.
