INGREDIENTS

  • 1 packet active dry yeast
  • 3/4 cup warm water (100°F or so)
  • 1/3 cup sugar
  • 1/2 tsp. salt
  • 1/4 cup butter, at room temperature
  • 1 egg
  • 1 egg yolk
  • 1 tsp. vanilla extract
  • 2 1/2 to 3 cups all-purpose flour
  • 3 to 4 cups vegetable oil
  • 1 to 1/2 cup powdered sugar

DIRECTIONS

  • Note: the dough you are about to make will be extremely sticky and will not form a ball in the processor bowl, nor will it willing come out of the bowl. Put flour on your hands and not on the dough to work with the dough.) Place yeast alone with 1/2 teaspoon sugar and a pinch of salt into a bowl with the warm water and stir to mix.
  • Place all ingredients except for the powdered sugar, the yeast mixture and the vegetable oil into the bowl of the food processor. Once the yeast has bloomed, about 8 minutes or so, add the yeast mixture to the bowl of the processor. Pulse the flour mixture to combine all well. Oil the inside of a large bowl. The dough will be placed into the bowl. With well floured hands, turn the dough out onto a well floured work station.
  • Form the dough into a ball as best you can and place the dough into the greased bowl, cover with a kitchen towel and set aside for 1 hour. The dough will double in size. Lightly punch the dough down and form into a rectangle about 8 or 9 inches by 4 or 5 inches. Tightly wrap in plastic wrap and place inside the refrigerator for at least 8 hours or overnight.
  • In a large pot heat the vegetable oil over medium-high heat to 360°F to 370°F. While the oil is heating, place the dough onto a well floured work station. Roll the dough into a rectangle about 1/4-inch thick. Cut rectangles of dough - should be about 20. Using a timer, place about four beignets into the hot oil, cook for about a minute, flip over and cook for another minute. Remove to a sheet pan lined with paper towels with wire racks. Repeat the process until all beignets are cooked. Toss them in powdered sugar and enjoy!! Cold beignets heated on high in the microwave for 10 seconds are fantastic.
